How to make it:
makes three to four portions
300g firm tofu, crumbled
1 medium leek, chopped
1 small onion, chopped
2 celery stalks, thinly sliced
a handful of cherry tomatoes
a can of chopped tomatoes
2 tbsp nutritional yeast
1 tbsp garlic powder
1 tbsp onion powder
2 tsp sweet paprika
2 tsp cumin powder
2 tbsp roasted red pepper paste

salt and pepper
In a large pan, on medium-high heat, drizzle a couple tablespoons of olive oil.
Add the chopped leek, onion and celery and stir around until soften.
Add the cherry tomatoes and the crumbled tofu and marry with the rest of the ingredients. Then add the dry spices and mix around.
Add the can of tomatoes and the roasted red pepper paste and wait until it starts bubbling, then cover the pan and reduce to medium-low for 10 minutes.
Remove the lid. Give it a good stir. The mixture should be less wet than it was.
Serving suggestions: toasted sourdough or pitta bread, drizzled with evoo and flakey salt, olive tapenade, manzanilla olives.
