How to make it:
makes eight portions
for the apple mixture:
10 apples, shredded
1tsp cinnamon powder
4 tsp granulated sugar
5 tbsp flaked almonds
for the cake mixture:
230ml vegetable oil
250g granulated sugar
3 eggs, medium sized
600g AP flour
1/2 tsp vanilla extract
3 tsp baking powder
Preheat your oven to 150ºC.
Peel the apples and grate on the larger shredding side. Squeeze the shredded apples, until they are free of liquids.
In a bowl mix apples, cinnamon and sugar together. Set aside.
In a separate bowl, mix the cake ingredients until combined thoroughly. Your mixture should be oily and somewhat crumbly.
Spread the cake mixture to the bottom of your baking dish, and leave some of it aside to crumble on top later.
Spread the apples evenly on top of the cake mixture.
Crumple the rest of the cake mixture on top, and sprinkle the flake almonds.
Bake in the oven for 50 minutes.
Serve with some custard or vanilla ice cream.
